1 onion , chopped
1/2 cup mushroom , sliced
1 cup arborio rice
1 1/4 cups chicken stock
1 cup leftover ham , and turkey combined
chopped parsley

Instructions

1.In a large microwave-safe bowl, add olive oil and butter and microwave it on high for 1 minute.

4.Add chopped leftover ham and turkey, parsley, salt, pepper and parmesan cheese. Mix well and microwave it again for 2 minutes.
