1 tablespoon tomato concentrate
800 g chicken thighs , on the bone skinned
2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon cinnamon
2 tablespoons sugar
1 1/4 liters cold water
2 ice cubes
pomegranate seeds ( to garnish )

Instructions

1.Preheat your oven to 350°F (180°C).

4.In a large pot or Dutch oven, add the pomegranate molasses, tomato concentrate, crushed walnuts, chicken thighs, salt, pepper, cinnamon, and sugar.
5.Pour in the water and add the ice cubes.
6.Cover the pot and bring to a boil over high heat. Reduce the heat to low and simmer for 2.5 to 3 hours, until the chicken is fully cooked.
7.Remove the chicken from the pot and shred the meat. Return the meat to the pot and stir to combine.
8.Garnish with pomegranate seeds and serve over rice.
