Ingredients

1 kg fennel bulb
500 g tomatoes
60 g white breadcrumbs , course
65 g parmesan cheese , grated
1 large red onion
3 garlic cloves , minced ( keep one separate )
2 teaspoons lemon zest
80 ml olive oil
65 g gruyere , grated ( optional )
Fennel, Tomato and Garlic Gratin is a delicious and flavourful vegetarian dish that is simple to make and perfect for a weeknight dinner or a Sunday roast. The combination of fennel, tomatoes, garlic, and lemon zest create a fresh, vibrant flavour that is hearty and satisfying. Instructions

1.Preheat your oven to 200°C.
2.Cut the fennel bulbs in half and grill them until browned and tender.
3.Cut the tomatoes into thick slices and then add them to the pan with some sliced onion.
4.In a separate bowl, mix together white breadcrumbs, grated parmesan cheese, minced garlic (2 cloves), lemon zest, and olive oil.
5.Layer the grilled fennel, sliced tomato and onion mixture, and breadcrumb mixture in a baking dish.
6.Top with grated Gruyere cheese (optional) and bake for 20-25 minutes or until golden brown and crispy on top.
