Ingredients

1 fennel bulb
1 large orange
12 black olives
1 tablespoon olive oil
1 tablespoon olive oil
1 tablespoon finely chopped red onion
salt & freshly ground black pepper
Fennel, Orange and Olive Salad is a combination of refreshing and healthy ingredients that complement each other perfectly. Instructions

1.Slice the fennel bulb very thinly and place in a large mixing bowl.
2.Cut off the top and bottom of the orange, and then slice off the peel and pith in sections. Cut the sections into small pieces and add to the bowl with the fennel.
3.Pit the olives and slice them roughly, before adding them to the same bowl.
4.Whisk together 1 tablespoon of olive oil, 1 tablespoon of white wine vinegar, and a pinch of salt and pepper. Pour the dressing over the salad and toss until everything is evenly coated. Serve cold.
