Ingredients

1 whole chicken , cut up
1 kg green tomatoes or 1 kg tomatillo
1 bunch flat leaf parsley
1 garlic clove
1/4 large grilled onion
6 serranos chilies
1/4 teaspoon cinnamon
1/2 teaspoon marjoram
1/2 teaspoon thyme
1 bay leaf
4 black peppercorns
2 cloves
1/2 cup green olives
1/2 cup blanched almond
1/2 cup raisins
1/2 teaspoon sugar
salt
Fely's Almond Chicken recipe is a signature dish from the state of Oaxaca in Mexico. The unique blend of spices, nuts, and vegetables gives the chicken a rich and complex flavor. The chicken is traditionally marinated in a spicy sauce known as mole before being baked to perfection. In this recipe, the mole is made with roasted tomatoes, garlic, and onion to create a smooth sauce, which is then simmered with the chicken. The addition of green olives, raisins, and almonds towards the end of cooking enhances the taste of the dish and takes it to another level. Instructions

1.Preheat oven to 375 degrees F.
2.Roast tomatoes with garlic and onion in the oven until the edges begin to brown.
3.Put the roasted vegetables, parsley, cinnamon, marjoram, thyme, bay leaf, peppercorns, and cloves into a food processor and blend them until you have a smooth sauce.
4.Heat a dutch oven over medium-high heat and sauté the chicken for 7 to 8 minutes until browned.
5.Add the sauce to the chicken and bring it to a boil.
6.Reduce the heat to low and let simmer for 10 minutes.
7.Mix in the green olives, almonds, raisins, and sugar, and simmer for an additional 5 minutes.
8.Season with salt to taste, then serve.
