Ingredients

1 2/3 cups frozen fava beans

1 onion , finely chopped
4 slices smoked Canadian bacon , rind removed , roughly chopped
2/3 cup arborio rice
2 1/4 cups hot chicken stock
1/4 cup freshly grated parmesan cheese
salt & freshly ground black pepper

Instructions

1.Cook fava beans in boiling salted water for 2 minutes. Rinse under cold water and remove outer skin.

6.Add fava beans and cook for a further 5-10 minutes or until rice is tender and liquid is mostly absorbed.
7.Remove from heat and stir in parmesan cheese. Season with salt and pepper. Serve topped with parmesan shavings.
