confectioners ' sugar
vegetable oil , for frying

Instructions

1.Beat the egg yolks until thick and lemon-colored. Beat in egg whites with salt until very thick.
2.Gradually beat in sugar and continue to beat an additional 5-10 minutes.
3.Stir in heavy cream, cardamom, melted butter, lemon extract, brandy, and enough flour to make a very soft dough.
4.Turn out on a floured board and roll very thin.
5.Cut into shapes with a pastry cutter and then cut 1 or 2 slits in the center of each shape.
6.Fry in hot oil until golden brown and crisp.
7.Drain on paper towels and dust with confectioners' sugar.
