Ingredients

1 1/2 lbs lamb , boneless lean
2 medium onions
black pepper , freshly ground
salt , to taste
6 cups water
1 cup water
1/2 cup rice
1/4 cup ghee
2 tablespoons ghee
5 garlic cloves , finely minced
1/4 cup vinegar
2 slices bread , roasted

Instructions

1.Cut the lamb into small pieces and set aside.
2.Thinly slice the onions and set aside.
3.In a large pot, heat 1/4 cup of ghee over medium heat.
4.Add the sliced onions and sauté until they begin to turn golden brown.
5.Add the lamb and continue to cook until the meat is browned.
6.Add 6 cups of water to the pot along with the salt and black pepper.
7.Bring to a boil and then reduce the heat to low.
8.Simmer for 1-2 hours until the lamb is very tender.
9.While the lamb is cooking, rinse the rice thoroughly.
10.In a separate pot, bring 1 cup of water to a boil.
11.Add the rinsed rice to the pot and stir.
12.Cover and simmer until the rice is cooked and tender.
13.Once the lamb is fully cooked, remove it from the pot and shred it with a fork.
14.Add the shredded lamb back to the pot.
15.Add the minced garlic and 2 tablespoons of ghee to the pot.
16.Stir well and cook on low heat for 15 minutes.
17.Serve the soup hot with roasted bread slices and a drizzle of vinegar.
