Ingredients

3 pita breads
1 lb romaine lettuce , torn into pieces
3 green onions , white and green finely chopped
1 cucumber , peeled , seeded and cubed
4 roma tomatoes , cubed
3/4 cup fresh parsley , chopped
2 garlic cloves , minced
1 tablespoon dried mint
1/4 cup olive oil
1/2 lemon , juice of , of a fresh
1 teaspoon sumac ( optional )
salt , to taste
Fatoosh, also sometimes spelled as fattoush, is a delicious Middle Eastern bread salad that has become popular all around the world. It's a light and refreshing salad that is often served as a side dish or even as a main course. The traditional version of the salad is made with crispy pita bread, lettuce, tomatoes, cucumbers, parsley, and a tangy sumac dressing. However, this recipe has a twist with the addition of garlic and dried mint in the salad dressing.

Instructions

1.Preheat oven to 350 °F.
2.Cut or tear pita bread into bite-size pieces and place them on a baking sheet. Bake in the oven for 5-8 minutes or until they are crispy.
3.In a large mixing bowl, add romaine lettuce, green onions, cucumber, tomatoes, and fresh parsley. Mix together.
4.In a separate mixing bowl, combine minced garlic, dried mint, olive oil, lemon juice, salt, and sumac. Mix until emulsified.
5.Drizzle the salad dressing over the salad mixture. Add the crispy pita bread to the top of the salad.

The pita bread in Fatoosh can add a significant number of calories to the dish.
