Ingredients

3 ounces olive oil
1/2 onion , diced
1 clove garlic , diced and crushed
3 ounces tomato paste
18 ounces fresh spinach
1 cup rice
1/2 teaspoon fresh dried leaf basil , bruised

Instructions

1.Rinse the rice in cold water, then place in a pot with 2 cups of water and a pinch of salt. Bring to a boil over high heat, then reduce heat to low and cover. Cook for 18-20 minutes or until rice is tender.
2.Heat olive oil in a large skillet over medium-high heat. Add the onion and garlic, then cook for 2-3 minutes or until soft. Stir in the tomato paste and cook for another 2 minutes.
3.Add the spinach to the skillet and stir well. Cover and cook for 5 minutes or until the spinach is wilted.
4.Once the rice is cooked, add it to the skillet with the spinach and stir well. Add the basil and mix it in.
