500 g butter beans , soaked overnight
2 tablespoons olive oil
2 onions , finely chopped
2 stalks celery , finely chopped
2 carrots , finely chopped
1 liter water
2 tomatoes , peeled and chopped
2 sprigs Greek oregano
1 teaspoon salt
1/8 teaspoon cayenne pepper
fresh ground pepper

Instructions

1.Drain and rinse the soaked butter beans and set aside.
2.Heat olive oil in a pot over medium heat and sauté onions, celery and carrots until the onion is translucent, about 5 minutes.
3.Stir in the water, tomatoes, oregano, butter beans, salt, cayenne pepper, and black pepper, Bring to a simmer and cook for about 90 minutes or until beans are tender.
4.Serve hot with freshly baked bread.
