500 g Greek fassolia gigantes ( butter beans )
1 kg tomatoes
160 ml olive oil
280 g onions , finely sliced
1 tablespoon tomato puree
3 cloves garlic , peeled & finely sliced
1 teaspoon sugar
salt and black pepper
3 tablespoons parsley , finely chopped
1 tablespoon oregano
1 teaspoon thyme

Instructions

1.Soak the fassolia gigantes in water overnight.

11.Pour the tomato mixture over the top and gently mix until everything is well combined.
12.Cover the pan with aluminum foil and bake for 30-40 minutes.
13.Remove the foil and bake for another 10-15 minutes or until the top is golden and crispy.
