1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
1/2 teaspoon fennel seed , crushed
1 tablespoon white wine vinegar
1 1/2 cups cracked farro
1 can crushed fire-roasted tomatoes
2 scallions , thinly sliced
1 1/2 cups panko breadcrumbs
1/2 cup chopped fresh parsley
1 teaspoon grated lemon zest ( yellow only )
2 tablespoons minced fresh oregano
3/4 cup freshly grated parmigiano-reggiano cheese or 3/4 cup asiago cheese
6 ounces lightly salted fresh mozzarella cheese , thinly sliced

Instructions

1.In a large pot, heat the olive oil over medium-high heat. Add the chopped onion and a pinch of kosher salt and black pepper. Cook, stirring occasionally, until the onion is softened and translucent.
2.Add the Italian sausage (with casings removed), minced garlic, dried oregano, crushed red pepper flakes, and crushed fennel seed. Cook until the sausage is browned and cooked through, breaking it into small pieces with a wooden spoon.
3.Stir in the white wine vinegar and let it cook off for 1 minute.
4.Add the cracked farro and cook for 3-5 minutes, until the farro is toasted and fragrant.
5.Stir in the crushed fire-roasted tomatoes and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer until the farro is tender and the mixture has thickened, about 25-30 minutes.
6.In a separate bowl, combine the scallions, panko breadcrumbs, chopped fresh parsley, grated lemon zest, and minced fresh oregano.
7.Preheat the broiler on high. Remove the cover from the pot and sprinkle the grated parmigiano-reggiano cheese or asiago cheese over the top. Place the sliced fresh mozzarella cheese over the cheese. Sprinkle the breadcrumb mixture over the cheese.
8.Place the pot under the broiler and broil until the cheese is melted and bubbly and the breadcrumbs are browned and crisp, about 3-5 minutes.
