Ingredients

1/2 lb bacon ( optional )
1 package refrigerated crescent dinner rolls
2 teaspoons prepared mustard , of your choice ( we like yellow )
1/4 cup butter , diced
1 1/2 lbs fresh asparagus , 1/2-inch pieces
1 medium onion , diced
1/2 cup fresh mushrooms , sliced ( or 1-4 oz can , drained )
2 eggs , beaten
1 teaspoon thyme
salt & pepper
1/4 teaspoon garlic powder
1/4 teaspoon parsley
2 cups shredded mozzarella cheese

Instructions

1.Preheat the oven to 375°F.
2.Unroll the crescent roll dough and press into the bottom and up the sides of a 9-inch pie dish.
3.Spread the mustard over the bottom of the crust.
4.Cook the bacon in a skillet until crispy. Remove and drain on a paper towel-lined plate. Crumble the bacon once cool enough to handle.
5.In the same skillet over medium-high heat, melt the butter. Add the asparagus, onion, mushrooms, thyme, garlic powder, parsley, salt, and pepper. Cook for about 5-7 minutes until tender but still slightly firm.
6.In a bowl, whisk together the beaten eggs and shredded mozzarella cheese.
7.Once the vegetables are cooked, spread the mixture over the crust. Pour the egg and cheese mixture over the vegetables. Sprinkle the crumbled bacon over the top.
8.Bake for 25-30 minutes or until golden brown and set. Let it cool for a few minutes before slicing and serving.
