Ingredients

10 slices pancetta , thinly sliced
olive oil
1 clove garlic , finely chopped
1/2 cup thyme
1/2 large savoy cabbage , halved and finely sliced
1/2 cup parmesan cheese , grated
1 lb farfalle pasta
salt & freshly ground black pepper
1/2 lb buffalo mozzarella , diced into 1 inch pieces
toasted pine nuts
Farfalle pasta, also known as bow tie pasta, is a classic Italian pasta that is well-liked for its butterfly-like shape. Instructions

1.Cook pancetta in a large skillet over medium heat until crisp. Use a slotted spoon to transfer to a plate and reserve.
2.In the same skillet, heat olive oil and add garlic. Cook for 1 minute. Then, add thyme and cook for another minute.
3.Add savoy cabbage and cook until wilted, stirring occasionally.
4.Cook farfalle pasta according to package instructions.
5.Reserve 1 1/2 cups of the cooking water and drain the pasta.
6.Add drained pasta to the skillet with the cabbage, then add reserved cooking water, parmesan cheese, and pancetta. Cook for 2-3 minutes.
7.Add buffalo mozzarella and cook until it has melted slightly.
8.Divide into bowls and sprinkle with toasted pine nuts before serving.

PROS

Farfalle pasta makes for an excellent base as its folds capture the delicious sauce.
