8 ounces farfalle pasta ( bowtie pasta )

Instructions

1.Begin by boiling a large pot of salted water for the pasta.
2.While the pasta cooks, heat olive oil in a large pan over medium heat.
3.Add garlic and sauté for one minute.
4.Add finely diced tomato and sun-dried tomatoes, then sauté for two minutes till the tomatoes are slightly soft and have released their juices.
5.Pour in white wine, bring to a simmer and cook till the wine has reduced a bit.
6.Toss in the chopped green bell pepper and continue to simmer, stirring occasionally.
7.Once the pasta is done, reserve a cup of the pasta cooking water, then drain the pasta and transfer it directly into the pan with the sauce. Toss everything together.
8.Add a splash of the reserved pasta cooking water to thin the sauce if necessary.
9.Serve hot, garnished with some freshly grated parmesan, if desired.
