3 lbs boneless beef chuck roast
1/4 cup water
1 1/2 cups beef broth
3 tablespoons red wine vinegar
2 tablespoons chili powder

1 large onion , Diced
1 can green chili peppers , diced

1 tablespoon all-purpose flour
2 cups sour cream
3 cups monterey jack cheese , shredded & divided
1 cup olive oil
20 corn tortillas
lettuce , shredded ( optional )
tomatoes , diced ( optional )

Instructions

1.Preheat oven to 375°F (190°C).
2.In a large skillet, cook the beef over medium-high heat until browned.
3.Add water, beef broth, red wine vinegar, chili powder, cumin, onion, green chili peppers, and jalapeno peppers. Reduce heat to low, cover and let it simmer for 2-4 hours or until beef is fork-tender.
4.Remove from heat and shred the beef with a fork.
5.In a small saucepan, whisk together flour and sour cream until smooth. Cook over low heat until thickened, then remove from heat.
6.On each tortilla, place a small amount of shredded beef and a sprinkle of cheese. Roll up and place seam-side down in a greased 9x13 inch baking dish.
7.Pour the sour cream mixture over the enchiladas and sprinkle with the remaining cheese. Bake for 20-25 minutes, uncovered.
8.Cool for 5 minutes then serve with lettuce, tomatoes, and salsa if desired.
