6 sheets phyllo pastry
1/4 lb feta cheese
2 hard-boiled eggs , peeled
1/2 cup loosely packed finely minced parsley
2 tablespoons minced scallions
2 tablespoons minced fresh dill
1/2 cup butter , melted
salt and pepper

Instructions

1.Preheat the oven to 375°F and line a baking sheet with parchment paper.
2.Mash the feta cheese and eggs together in a medium bowl, then stir in parsley, scallions, dill, salt, and pepper.
3.Melt the butter in a small bowl.
4.On a clean, dry surface, place one sheet of phyllo pastry. Brush the entire sheet with butter. Layer another sheet on top, brushing with butter again. Repeat process until six sheets have been layered.
5.Cut the layered phyllo into 4-5 equal strips, about 2-3 inches wide.
6.Place a heaping tablespoon of the feta mixture at the bottom of each strip. Fold the strip from the bottom corner to the opposite edge, creating a triangle. Continue to fold in this manner until you reach the end of the strip. Repeat with the remaining strips and filling.
7.Place the triangles on the prepared baking sheet, and brush the tops with the remaining butter.
8.Bake in the preheated oven for 18-20 minutes until they are golden brown and crisp.
9.Serve hot as a healthy snack, meal, or appetizer!
