1/4 cup water , bottled PLUS
1 cup water
1 1/2 teaspoons citric acid
1 gallon whole milk , not organic and not ultra pasteurized
1 teaspoon cheese salt ( more or less ) ( optional )

Instructions

1.Dissolve the rennet tablet in 1/4 cup of bottled drinking water.
2.In a large pot, combine 1 cup water and citric acid.
3.Slowly add milk and stir until well combined.
4.Heat the pot over medium-high heat while stirring continuously.
5.Heat the milk to 88°F and remove from heat.
6.Add diluted rennet and stir well.
7.Let the mixture sit for 5 minutes until curd forms.
8.Cut the curd into squares and heat the pot again for 10 minutes over medium-high heat.
9.Slowly stir the curds until they come together and form a ball.
10.Remove the cheese ball from the pot and stretttttch it out, then fold it back.
11.If desired, addcheese salt to enhance the taste. It is now ready to serve fresh or preserve it in the refrigerator in salted water.
