Ingredients

4 cups flour

2 oranges , juice and zest of , plus enough extra
2 cups fresh orange juice , in total
1/2 cup brandy ( but the brandy tastes better ! ) or 1/2 cup water ( but the brandy tastes better ! )
1 cup golden raisin
1 cup walnuts , roughly chopped , toasted

Instructions

1.Preheat oven to 350°F. Grease and flour a 10-inch round cake pan.
2.In a medium bowl, combine flour, baking powder, cinnamon, cloves, and salt. Set aside.

4.Add orange juice and zest, brandy, and half of the fresh orange juice and whisk until the sugar dissolves.
5.Gradually add in the dry ingredients, mixing until well combined and no lumps remain.
6.Fold in the raisins and chopped walnuts.
7.Pour the batter into the prepared cake pan and bake for 50-60 minutes or until a toothpick comes out clean.
8.Remove from the oven and let cool for 10 minutes in the pan before removing and transferring to a wire rack to cool completely.
