Ingredients

1 lb salt cod fish ( optional )
1 tablespoon butter
2 medium onions , finely chopped
1 garlic clove , minced
1/4 teaspoon oregano
1/4 teaspoon ground cumin
1 bay leaf
fresh ground pepper
1 cup long-grain rice , cooked in
1 cup milk , and
1 cup water
1 cup corn kernel , cooked
2 1/2 cups cabbage , shredded and cooked
2 cups winter squash , cooked and mashed
2 cups zucchini , chopped and cooked
1 cup baby lima beans or 1 cup fava beans , cooked
1 cup green peas , cooked
1 cup green beans , cooked
1/2 cup peanuts , ground
5 cups 2 % low-fat milk
1 1 cup queso fresco or 1 cup queso blanco , shredded
1 teaspoon salt ( or to taste if fish is included )
3 eggs , hardboiled and sliced
1/2 cup parmesan cheese , grated
Fanesca is a traditional Ecuadorian soup traditionally eaten during Holy Week, which is in the spring. The soup is loaded with a variety of nutrient-rich ingredients, which can vary depending on the region. The soup is thick, hearty, and filling, making it the perfect meal for a cold, rainy day. Instructions

1.Soak the salted cod fish overnight in a large bowl of cold water.
2.Drain the fish and cut it into smaller pieces.
3.In a large pot, heat the butter over medium heat.
4.Cook onions and garlic for 2-3 minutes, or until they are soft and translucent.
5.Add salted cod fish, oregano, cumin, bay leaf, and fresh ground pepper. Stir everything together.
6.Add the rice, milk and water mixture, cooked corn, cabbage, winter squash, zucchini, baby lima beans or fava beans, green peas, green beans, and peanuts in the pot.
7.Pour the 5 cups of 2% low-fat milk.
8.Cook on low heat for about 45 minutes, or until the vegetables are tender.
9.Add the queso fresco or queso blanco and salt accordingly if salted cod fish is included. Stir everything together.
10.If serving with hard-boiled eggs, slice the boiled eggs and serve them on the side.
11.Top with grated Parmesan cheese before serving.
