Instructions

1.Preheat oven to 350°F.
2.Grease and flour a 9x13 inch baking pan.
3.In a large bowl, mix together vegetable oil, flour, sugar, brown sugar, eggs, vanilla, cinnamon, nutmeg, baking soda and salt until well combined.
4.Stir in shredded carrots, chopped pecans, and raisins.
5.Pour batter into prepared pan.
6.Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
7.Allow cake to cool completely before frosting.
8.In a separate bowl, mix together powdered sugar, cream cheese and vanilla until smooth.
9.Spread frosting over cooled cake.
