2 cans chickpeas , rinsed and drained
6 garlic cloves , chopped
1/2 onion , chopped
1 extra large egg
1 lemon , juice of
1/3 cup chopped parsley
1/3 cup chopped cilantro
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon cayenne pepper
1/3 cup self rising flour , plus 2 1/2 tbs
1/4 cup all-purpose flour , for shaping patties
salt
canola oil ( for frying )
1 cup plain Greek yogurt
1/4 cup tahini paste
1 lemon , juice of

Falafel in Pita with Roasted Garlic & Caramelized Onion Couscous is a popular Middle Eastern dish that is loved worldwide. Instructions

1.In a food processor, pulse the chickpeas, chopped onion, chopped garlic, egg, lemon juice, parsley, cilantro, cumin, coriander, cayenne pepper, 2 1/2 tablespoons of self-rising flour, and salt until it becomes a chunky paste.
2.Transfer mixture to a bowl and stir in the remaining 1/3 cup of self-rising flour.
3.Using flour as needed, shape mixture into patties.
4.Fry the patties in canola oil in a large skillet until they are golden brown, about 3 minutes each side.
5.In a bowl, mix the Greek yogurt, tahini paste, lemon juice, garlic, salt, paprika together until smooth. Add water to thin if necessary.
6.Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and garlic and fry for a few minutes until they become translucent. Add chicken bouillon cube, salt, and roasted garlic to the skillet and cook for another 2 minutes.
7.Prepare couscous as directed and mix it with caramelized onion and garlic.
8.Cut pita bread in half and fill it with falafel patties, a spoonful of tahini sauce, diced tomatoes and cucumbers.
9.Serve with a side of Roasted Garlic & Caramelized Onion Couscous.
