Ingredients

1/2 lb dried garbanzo beans ( chick peas )
1/4 cup cracked wheat ( bulgher )
1 small onion
1 tablespoon parsley flakes
4 cloves garlic
2 tablespoons lemon juice
1 teaspoon ground cumin
1/2 teaspoon coriander
1/2 teaspoon pepper
1/2 teaspoon chili powder
1 teaspoon paprika
1 dash cayenne pepper
2 tablespoons breadcrumbs ( or as needed )
oil ( for frying )

Instructions

1.Soak dried garbanzo beans/chickpeas overnight in cold water.
2.Drain the soaked beans and place them into a food processor with the cracked wheat/bulgher, onion, parsley flakes, garlic, lemon juice, cumin, coriander, pepper, chili powder, paprika, and cayenne pepper.
3.Pulse until the ingredients are combined and a coarse puree forms.
4.Add breadcrumbs as needed for binding and continue to pulse until the mixture is crumbly and not too sticky to handle.
5.Take spoonfuls of the mixture and shape into small patties.
6.Heat the oil in a frying pan over medium-high heat.
7.Fry the falafels in the oil until golden brown on both sides, then drain on paper towels.
8.Serve hot with hummus, tzatziki or tabbouleh, and pita bread or in a wrap or salad.
