9 tablespoons olive oil
3 tablespoons mayonnaise

Instructions

1.Preheat oven to 400 F (200 C).
2.In a large bowl, mix together the yogurt, tomato paste, crushed garlic cloves, black pepper, cardamom, cinnamon, cumin, saffron, salt, and olive oil.
3.Rub the lamb leg with the mayonnaise and then coat it well with the yogurt mixture.
4.Put the leg into the oven and roast for around 30 minutes.
5.Reduce the oven temperature to 350 F (175 C) and continue to roast for another hour.
6.Once done, remove from oven, and leave to rest for 10 minutes before carving.
