Ingredients

1/2 lb dry lentils
1 onion , chopped
2 garlic cloves , whole so we can remove them later
2 bay leaves
1 tablespoon tomato paste
5 tablespoons olive oil
2 tablespoons vinegar
salt , pepper
water

Instructions

1.Rinse lentils and place them in a large pot with 5 cups of water.
2.Bring the water to a boil and let it boil for 2-3 minutes. Then, remove the pot from the heat and discard the water.
3.In another pot, sauté the onion in olive oil until it softens. Add the garlic cloves, bay leaves, and tomato paste and simmer for 1-2 minutes.
4.Add the lentils to the pot with the onion mixture, along with 6 cups of water. Bring to a boil and simmer for 30-40 minutes. You may need to add more water as it cooks.
5.Remove the garlic cloves and bay leaves from the pot. Add the vinegar, salt, and pepper to taste.
