Ingredients

500 g lean ground beef ( typically less than 5 % fat )
200 g sweet potatoes , chunks
300 g mexican style beans , mix drained and rinsed
400 g chopped tomatoes
100 g jalapenos , drained
1 teaspoon smoked paprika
2 teaspoons ground cumin
1 avocado , stone removed
juice 1 lime
20 g coriander , chopped
4 wholemeal tortillas

Instructions

1.Preheat oven to 180C/fan 160C/gas 4.
2.Heat a large frying pan over a high heat and cook the beef for 5-6 mins until browned.
3.Add the sweet potatoes and cook for a further 5 mins.
4.Stir in the mexican style beans, chopped tomatoes, jalapenos, smoked paprika, and ground cumin.
5.Place the whole mixture into a large baking dish, add the tortillas on top and brush them with a little oil.
6.Bake for 25-30 mins, until the tortillas are crispy and golden. Serve with the avocado mashed with the lime juice and coriander.
