Ingredients

4 cups chicken broth
1 whole soup chicken
1 onion
2 stalks celery
2 carrots
1 tablespoon salt
1/4 cup butter
1/4 cup canola oil
1 onion ( chopped )
1 package italian arborio rice
1 tablespoon tomato paste
1/2 cup parmesan cheese
1/4 teaspoon ground nutmeg
1/2 cup light cream
1 tablespoon Italian parsley ( chopped )
1 teaspoon salt
fresh ground black pepper
Risotto is a traditional Northern Italian dish, made from high starch rice and simmered in broth until it reaches a creamy consistency. Instructions

1.In a large saucepan, simmer the chicken broth and whole soup chicken for 30 minutes.
2.Remove the chicken and shred the meat, discarding the bones and skin.
3.In a separate pot, sauté the onion, celery and carrots in butter and canola oil over medium heat until vegetables are tender.
4.Add the arborio rice and tomato paste, stirring for 2 minutes to coat the rice with the vegetables.
5.Add the chicken broth to the pot, one cup at a time, stirring constantly until the broth is absorbed before adding the next cup.
6.Once all the broth has been added, stir in the shredded chicken, parmesan cheese and nutmeg.
7.Stir in the light cream, chopped Italian parsley and salt and pepper to taste.
8.Serve immediately.
