Ingredients

60 g kumquats
1 star fruit ( carambola )
2 kiwi fruits
1 mango
1 pink grapefruit
1/2 liter milk
50 g sugar
salt
2 teaspoons lemon juice
25 g cornflour ( to thicken )
1/8 liter white wine
1 egg white , whisked
1 egg yolk
Exotic Fruit Kebabs with Wine Creme is a light and fruity dessert that captures the freshness and sweetness of ripe summer fruits. Instructions

1.Cut the kumquats and star fruit in quarters, skin-on, remove seeds if any, and reserve them aside in a bowl.
2.Peel kiwi fruits and cut into chunks, and add to the reserved kumquats and star fruit in the bowl.
3.Peel and cut the mango into chunks and add to the bowl.
4.Peel and segment the pink grapefruit and add to the bowl.
5.Thread the fruits onto skewers and chill in the fridge until needed.
6.For the white wine creme, mix together the milk, sugar, a pinch of salt, lemon juice, cornflour and white wine in a large bowl stirring until well combined.
7.Cook the mixture over low heat, while whisking continuously for 10-15 minutes, until the mixture thickens and becomes creamy.
8.Once the white wine creme has thickened, remove from heat, and stir in the whisked egg white.
9.In a separate bowl, whisk the egg yolk and slowly pour into the white wine creme mixture stirring continuously to combine well.
10.Serve the fruit kebabs with the chilled white wine creme on the side.
