Ingredients

2 tablespoons vegetable oil
1 eggplant , cut into 1-inch cubes
6 tablespoons vegetable oil
1/2 teaspoon cumin seeds
1/2 teaspoon fenugreek seeds , crushed
1/2 teaspoon kalonji ( onion seed )
1/2 teaspoon sesame seeds
1 piece fresh ginger root , chopped
5 cloves garlic , chopped
2 onions , peeled and finely chopped
1 green chile pepper , seeded and chopped
1/4 cup tomato puree
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon ground turmeric
3/4 teaspoon salt
1/2 cup coconut milk
1 tablespoon cilantro leaves

Instructions

1.Heat 2 tablespoons of vegetable oil in a large frying pan over medium heat.
2.Add the eggplant and cook until golden brown and tender, stirring occasionally. Remove the eggplant from the pan and set it aside on a plate.
3.Add 6 tablespoons of vegetable oil to the same pan and heat over medium-high heat.
4.Next, add the cumin seeds, fenugreek seeds, kalonji, sesame seeds, ginger, garlic and onions to the pan. Fry for 5-7 minutes until the onion is translucent.
5.Add the green chile pepper, tomato puree, chili powder, coriander, turmeric and salt. Cook for another 2-3 minutes.
6.Stir in the coconut milk and add the eggplant to the pan. Reduce the heat to low and simmer for 5-7 minutes.
7.Garnish with cilantro leaves, and serve hot with rice or naan bread.
