Ingredients

1/2 kg kingfish
1/2 kg basmati rice , washed and soaked for 30 minutes
3 medium onions , peeled , washed and sliced
1 1/2 cups oil
1/2 cup nonfat plain yogurt , beaten
1 medium tomatoes , washed , peeled and chopped
3 tablespoons fresh ginger-garlic paste
2 teaspoons green chili paste
1 teaspoon cinnamon
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon turmeric powder
1 teaspoon red chili powder
salt
10 mint leaves , washed and chopped ( or more if desired )
10 sprigs coriander leaves , washed and chopped ( or more if desired )
5 sprigs of fresh curry leaves , washed and torn ( or more if desired )
2 tablespoons tamarind paste
1 tablespoon red chili powder
3 sprigs of fresh curry leaves , washed and torn

Instructions

1.Soak the basmati rice for 30 minutes and then boil until it's half cooked
2.In a large pan, heat oil and fry the sliced onions until golden brown
3.Add the ginger-garlic paste, green chili paste, cinnamon, coriander powder, cumin powder, turmeric powder, and red chili powder. Fry the mixture until fragrant.
4.Add the tomatoes and curry leaves and cook until the tomatoes are soft and pulpy.
5.Add the tamarind paste and salt, and stir well to combine
6.Add the fish pieces to the pan and mix gently with the masala.
7.In a separate pan, cook the half cooked rice with some water and salt for about 15 minutes until done.
8.Spread the fish masala at the bottom of a large baking dish, and top it with a layer of cooked rice. Repeat the layers until all the fish and rice are used up.
9.Cover the top of the dish with a tight fitting lid or aluminum foil, and bake it in a preheated oven at 160°C (320°F) for 30 minutes.
10.Serve hot with garnished mint leaves, coriander leaves and if desired, sliced onion rings.
