Ingredients

12 ounces butter , softened to room temperature
2 cups sugar
1 1/2 tablespoons vanilla extract
1 1/2 tablespoons baking powder
1 teaspoon salt
2 2 ounces Cointreau liqueur ( I used 2 shot glasses , maybe more , I may have consumed the contents of a couple of those glasses mys ) or 2 ounces drambuie ( I used 2 shot glasses , maybe more , I may have consumed the contents of a couple of those glasses mys )
6 extra-large eggs
4 1/2 cups flour
3/4 cup buttermilk or 3/4 cup milk
1 large orange , juice and zest of
1 1/2 teaspoons baking soda
12 ounces mixed chopped toasted nuts ( I use a combo of walnuts , almonds and hazelnuts )

Instructions

1.Preheat the oven to 350°F. Grease and flour a 10-inch springform pan.
2.In a large mixing bowl, cream together the butter, sugar, and vanilla extract until light and fluffy.
3.Add in the baking powder, salt, and the Cointreau or drambuie liqueur. Beat until well combined.
4.Slowly add in the eggs, beating well after each addition.
5.In a separate bowl, whisk together the flour and buttermilk until well combined.
6.Gradually add the flour mixture to the egg mixture, stirring until just combined.
7.Stir in the orange juice and zest, baking soda, and mixed nuts.
8.Pour the batter into the prepared pan.
9.Bake for 50-60 minutes or until a toothpick comes out clean when inserted in the center.
10.Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
