2 cups unbleached all-purpose flour

seedless raspberry preserves , to taste
1 lb bittersweet chocolate , chopped
1 pint heavy cream
5 1/3 ounces unsalted butter
splash espresso or strong coffee
1 -2 tablespoon light corn syrup ( optional )

Instructions

1.Preheat oven to 350°F.
2.In a mixing bowl, beat flour, sugar, baking soda and salt until combined.
3.In a large saucepan, melt 1 cup unsalted butter over medium heat. Add espresso, Chambord and baking cocoa, whisking until smooth. Add cheese and whisk until melted.
4.Add egg and almond extract to the saucepan, whisk until combined. Add dry ingredients to the wet ingredients in the saucepan, whisk until just combined.
5.Grease 2-9-Inch round cake pans. Pour 2 cups batter in each pan. Bake for 25 minutes, Cool in pans for 10 minutes. Invert onto wire racks to cool completely.
6.Place 2 9-inch cakes on top of each other with raspberry preserves spread in the middle. Glaze: Heat cream and butter in a saucepan over medium heat. Remove from heat. Add chocolate, corn syrup and espresso. Whisk until smooth. Pour sauce over cake, spreading to cover.
