1 egg , beaten with 2 tsp water
kosher salt or coarse sea salt

fresh ground black pepper
dried granulated garlic
instant instant minced onion

Instructions

1.Combine water and sugar in a mixing bowl. Sprinkle the yeast on top, then let it sit until foamy (about 10-15 minutes).
2.Add the salt and flour to the yeast mixture. Using a stand mixer with the dough hook attached, mix on low speed until the dough comes together and pulls away from the sides of the bowl. Knead the dough on medium speed for 5-6 minutes until smooth and elastic.
3.Grease a large bowl with olive oil, then transfer the dough to the bowl. Cover with a clean kitchen towel and let it rise in a warm place until doubled in size (about 1 hour).
4.Preheat the oven to 400°F. Line two baking sheets with parchment paper.
5.In a large pot, bring 2 quarts of water and baking soda to a boil.
6.Divide the dough into 12 equal pieces. Roll each piece into a long rope, then twist the ends to form a pretzel shape.
7.Place the pretzels in the boiling water for 1 minute, then transfer them to the prepared baking sheets.
8.Brush the pretzels with the beaten egg, then sprinkle with kosher salt, cumin seed, caraway seed, white sesame seeds, black sesame seeds, poppy seeds, fresh ground black pepper, dried granulated garlic, and instant minced onion.
9.Bake for 15-18 minutes until golden brown. Serve warm.
