2 large potatoes , peeled and chopped
8 ounces fresh green beans , prepared
1 cup carrot , peeled and sliced
1/2 medium onion , sliced
1/4 cup canola oil
1/2 jalapeno pepper , deseeded and diced
2 teaspoons garlic , minced
1 teaspoon ginger , grated
1/2 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon smoked paprika
1/2 teaspoon black pepper , freshly ground
1 teaspoon salt ( plus more adjust to suit taste buds )
8 ounces canned diced tomatoes
1/2 teaspoon chili pepper ( optional )

Instructions

1.In a large pot, heat up the canola oil over medium-high heat.
2.Add the sliced onion and jalapeno pepper to the pot, and sauté for 1-2 minutes or until onion is translucent.
3.Add the minced garlic and grated ginger to the pot, and stir well.
4.Add the chopped potatoes, sliced carrots, and fresh green beans to the pot, and stir well.
5.Add the turmeric, coriander, smoked paprika, black pepper, and 1 teaspoon of salt to the pot, and stir well.
6.Add the canned diced tomatoes to the pot, and stir well.
7.Add the optional chili pepper to the pot, if desired.
8.Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 25-30 minutes or until the vegetables are tender.
9.Adjust seasoning with additional salt and black pepper to taste.
