2 lbs lamb chops ( ribs and meat )
1/4 cup clarified butter ( purified )
2 cups white onions ( thinly chopped )
1 tablespoon fresh garlic or 2 teaspoons garlic powder
1 tablespoon fresh ginger root juice or 1/2 teaspoon ginger powder
1 teaspoon false cardamom ( korerima )
1/4 teaspoon turmeric
2 chili peppers ( seeded and sliced )
6 cups water
salt

Instructions

1.In a large pot, melt clarified butter over medium heat.
2.Add onions and sauté for 5 minutes or until onions are translucent.
3.Add garlic, ginger, turmeric, chili peppers, and false cardamom to the pot and sauté for another 2-3 minutes.
4.Add lamb chops and stir until coated in the onion and spice mixture.
5.Pour in water and add salt. Bring to a boil, then reduce heat to medium-low and simmer for around 1 hour or until the lamb is tender.
6.Serve hot with injera bread or over rice.
