Ingredients

1 1/2 cups wheat flour or 1 1/2 cups teff flour
1/2 cup barley flour
3 tablespoons butter ( purfied or clarified )
1/4 teaspoon cardamom
1 teaspoon baking powder
1 tablespoon chili powder ( Berbere )
salt and black pepper
2 cups water ( or more )
Ethiopian Instant Bread(Chéchébsa or Kita Firfir) is a staple food in Ethiopia that is commonly eaten for breakfast or as a snack. It is also known as Kita Firfir as it is often made with leftover bread that has been shredded and cooked with spices and butter. The dish can be served in many ways, such as dipping it in tea or coffee or topping it with Suf Fita (a type of spicy sauce). The bread is also known as Chéchébsa which means shredded flatbread.

Instructions

1.Mix the wheat flour, barley flour, baking powder, berbere spice, salt, and black pepper in a bowl.
2.Soften the butter and add to the bowl.
3.Add water slowly to make a slightly-wet dough. Knead it well for a few minutes until it forms a smooth dough.
4.Flatten the dough into a flatbread.
5.Heat a skillet over medium-high heat.
6.Place the flatbread into the skillet and cook for 3-5 minutes on each side until it is cooked through.
7.Remove the bread from the skillet and serve immediately with additional butter or oil.
