Ingredients

2 red onions , chopped
1/3 cup vegetable oil
1 tablespoon garlic paste
4 ripe tomatoes , chopped
3 cups water , divided
14 ounces dried beef
2 tablespoons Ethiopian berbere seasoning
1/2 cup Ethiopian kibbeh ( spiced clarified butter )
2 teaspoons salt
2 pieces injera ( Ethiopian bread )
Ethiopian Firfir with Dried Beef (Quanta Firfir) is a traditional Ethiopian dish that is typically served during festivals and special occasions. The dish is made by simmering dried beef with Ethiopian berbere seasoning and kibbeh (spiced clarified butter) until tender. The addition of injera (Ethiopian bread) gives the dish a unique texture and flavor. The spices in the berbere seasoning bring a heat to the dish while the kibbeh balances it with a subtle buttery flavor. This dish is perfect for a special occasion or a hearty meal.

Instructions

1.Soak the dried beef in cold water for 24 hours, changing the water at least 2 times during that time.
2.Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and garlic paste and cook for 3-4 minutes, stirring occasionally.
3.Add the chopped tomatoes and cook for another 5-6 minutes, stirring occasionally.
4.Drain the water from the beef and add it to the pot. Add 2 cups of water, Ethiopian berbere seasoning, and salt. Bring to a boil and then reduce heat to low and let it simmer for 45 minutes to an hour.
5.When the beef is tender, take it out of the pot and shred it. Put the shredded beef back into the pot and add 1 cup of water, kibbeh and injera. Mix everything together and let it cook for another 10 minutes or until the injera is completely soft.
6.Serve hot with extra injera slices on the side.
