Ingredients

5 tablespoons olive oil , divided , or more as needed
2 1/4 pounds beef oxtail , cut into pieces
1 onion , sliced
3 carrots , sliced
1 leek , sliced
5 cloves garlic , crushed
4 cups red wine
3 ripe tomatoes , quartered
1 sprig thyme
2 bay leaves
water to cover
1 cube beef bouillon ( optional )
salt and ground black pepper to taste
1 tablespoon butter
1/4 cup all-purpose flour

Instructions

1.Heat 3 tablespoons of olive oil in a large pot over medium-high heat.

5.Return the oxtail to the pot and add the red wine, tomatoes, thyme, bay leaves, and enough water to cover the meat entirely.
6.Optional: Add the beef bouillon cube for extra flavor.
7.Bring the liquid to a boil, then reduce the heat to low and simmer for 3 hours or until the meat is tender.
8.Remove the oxtail from the pot and place it on a plate, cover with foil to keep warm.
9.Strain the remaining liquid into a saucepan.
10.Melt the butter in the saucepan over medium heat.
11.Gradually add the flour and whisk until the mixture is smooth.
12.Cook the sauce for 5 minutes or until thickened.
13.Serve the oxtail with the red wine sauce and crusty bread.
