Ingredients

3 ancho chilies
3 lbs boneless lamb stewing meat , in 2-inch cubes
1 lb tomatoes , peeled seeded , and chopped ( about 3 medium )
2 garlic cloves , chopped
1/4 cup raisins
1/8 teaspoon ground cloves
1/8 teaspoon cinnamon
salt & freshly ground black pepper
1 cup dry sherry
1/4 cup toasted slivered almonds
Estofado De Carnero, or lamb stew, is a classic Mexican dish that is served on special occasions like Christmas or Easter. It is a comforting dish that is perfect during the cold season. Instructions

1.Preheat the oven to 300°F.
2.Stem and seed the ancho chiles, then place them in a bowl of boiling water to soften for 30 minutes. Drain and puree them in a blender until smooth.
3.Season the lamb cubes with salt and pepper. Heat a Dutch oven over medium-high heat. Add the lamb and brown on all sides.
4.Add the tomatoes, garlic, raisins, cloves, and cinnamon. Stir well.
5.Pour in the sherry and ancho puree. Bring the mixture to a simmer, then cover the pot.
6.Place the pot in the oven and cook for 2 hours.
7.Remove the pot from the oven and serve the stew with a sprinkle of toasted slivered almonds on top.
