4 ears fresh corn , shucked , kernels removed ( about 3 cups fresh corn kernels )
kosher salt
2 tablespoons mayonnaise
2 ounces Cotija cheese or 2 ounces feta cheese , finely crumbled
1/2 cup finely sliced green onion
1/2 cup fresh cilantro leaves , finely chopped
1 jalapeno pepper , seeded and stemmed , finely chopped
1 -2 medium garlic clove , minced
1 tablespoon fresh lime juice
chili powder or hot chili flakes , to taste

Instructions

1.In a large skillet, heat canola oil over medium heat.
2.Add corn kernels and cook until lightly caramelized and tender, stirring occasionally, for about 10 minutes.
3.Remove from heat and let cool slightly.
4.In a large bowl, mix mayonnaise, Cotija cheese, green onion, cilantro, jalapeno pepper, garlic, lime juice, and chili powder or hot chili flakes to taste.
5.Add the caramelized corn kernels and mix well.
6.Serve warm or at room temperature.
