Instructions

1.Preheat oven to 350°F (175°C).
2.In a bowl, cream together butter, sugar, and vanilla extract until light and fluffy.
3.Add flour and espresso powder, mix until just combined.
4.Fold in coarsely ground espresso beans.
5.On a floured surface, roll the dough into a square, about 1/2 inch thick.
6.Cut into desired shapes and place on a baking sheet.
7.Bake for 15-20 minutes.
8.Cool on a wire rack before serving.
