Ingredients

3 egg whites
3/4 cup white sugar
1 teaspoon lemon zest
1 pinch salt
1 teaspoon cornstarch
1 teaspoon vinegar
1 teaspoon vanilla extract ( optional )
Espiros Dois (also known as Alderney biscuits) are a traditional Portuguese dessert made from simple ingredients that can be found in any kitchen. These light and airy meringue biscuits are perfect for those who want something sweet, but don't want to overindulge. The lemon zest adds a zingy flavor and aroma, while the cornstarch helps achieve the perfect texture. Plus, they're gluten-free!

Instructions

1.Preheat the oven to 275°F (135°C).
2.In a mixing bowl, beat the egg whites and pinch of salt until stiff.
3.Add in the sugar gradually, one tablespoon at a time, and continue to beat until the mixture is shiny and the sugar has dissolved.
4.Mix in cornstarch, lemon zest, vinegar and vanilla extract, if using.
5.Line a baking sheet with parchment paper and spoon the mixture into 6 or 8 circular shapes.
6.Bake for 50-60 minutes or until the meringues are crisp on the outside but tender and soft on the inside.
7.Turn off the oven and leave the meringues in there until it has cooled down.
8.Serve and enjoy your Espiros Dois!
