Ingredients

1 medium onion , chopped

1 head well-rinsed escarole ( chopped )
5 cups chicken stock
1/2 cup orzo pasta ( oat seed sized pasta )
frozen chopped spinach
1/2 teaspoon salt
pepper
grated locatelli cheese ( to garnish ) or parmesan cheese ( to garnish )
1 cup tiny meatballs , not browned ( marble size )
ground meat , Italian breadcrumbs , grated locatelli cheese ( or Parmesan )

Instructions

1.In a pot, sauté the onion and garlic in butter for about 3 minutes.
2.Add sugar and cook for another 3 minutes.
3.Add escarole and half of the chicken stock and cook for about 10 minutes.
4.In a separate pot, cook orzo according to package instructions with the remaining chicken stock.
5.Add the cooked orzo with the chicken stock to the pot with the escarole mixture.
6.Add frozen spinach, salt, pepper, and meatballs to the pot and cook for another 10 minutes.
7.Garnish with grated cheese before serving.
