12 ounces couscous , cooked
2 tablespoons parsley , minced
2 cups tangerines or 2 cups mandarin orange segments
mint sprig ( to garnish )

Instructions

4.Add olive oil, raisins, chickpeas, and orange juice and cook until fully heated.
5.Add cooked couscous and parsley and stir until fully combined.
6.Add tangerine or mandarin orange segments and mix gently.
7.Serve cold and garnish with mint sprigs.
