Ingredients

3 medium potatoes
1 large carrot , diced
5 tablespoons frozen green peas
2/3 cup green beans , chopped into bite-size pieces
1/2 medium onion , chopped
1 small red bell pepper , chopped
4 small gherkins , sliced
2 tablespoons capers
12 stuffed green olives
1 hard-cooked egg , sliced thin
2/3 cup mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon black pepper , to taste

Instructions

1.Peel the potatoes and chop them into bite-size pieces. Boil the potatoes along with the diced carrots until cooked and tender.
2.Add the frozen peas and chopped green beans to the pot and cook for another 2 minutes.
3.Remove the pot from heat and strain the vegetables.
4.In a mixing bowl, stir together mayonnaise, Dijon mustard, fresh lemon juice, and black pepper.
5.Add the boiled vegetables to the mixing bowl and toss the salad to coat the vegetables with the dressing.
6.Further add chopped onions, red bell pepper, sliced gherkins, capers, green olives, and sliced boiled egg to the mixing bowl and stir to combine everything together.
