Ingredients

2 cups raw quinoa
2 quarts water
1/2 cup water
1/3 cup lime juice
2 fresh aji chilies , stems and seeds removed , chopped finely
2/3 cup olive oil
2 medium cucumbers , peeled , seeded , cut into 1/2-inch cubes
1 large tomatoes , seeds removed , cubed
8 green onions , white only , sliced
1/3 cup fresh Italian parsley , minced
1/3 cup mint , fresh minced
salt and black pepper
2 heads bibb lettuce , shredded
3 hard-boiled eggs , sliced thinly
2 fresh ears of corn , cooked , cut into 2-inch rounds
1 cup black olives , thickly sliced
Ensalada Con Quinoa De Peru is a traditional Peruvian salad that is made with quinoa, fresh vegetables, and a tangy dressing made with lime juice and aji chilies. Instructions

1.Rinse quinoa and place in a pot with 2 quarts of water. Bring to a boil and reduce heat to low, cover and simmer for about 15 minutes until tender and water is absorbed. Remove from heat and let it sit for about 5 minutes.
2.In a bowl, whisk together 1/2 cup water, lime juice, and chopped aji chilies. Add olive oil gradually while whisking.
3.In a large mixing bowl, toss together cooked quinoa, cucumber, tomato, green onions, parsley, mint, salt, black pepper, and dressing. Chill for at least 30 minutes.
4.To serve, place shredded Bibb lettuce on a plate and spoon quinoa salad on top. Garnish with sliced hard-boiled eggs, corn, and black olives.
