Ingredients

1 1/4 cups sugar
juice and peel of 1 lemon
1 lb strawberry , washed and hulled if large , cut in half lengthwise
1/2 lb blackberry , washed
1/2 lb blueberries , washed
3/4 lb raspberries
15 -20 slices white bread , very thin such as pepperidge farm crusts trimmed
2 cups freshly whipped cream
English Summer Pudding is a classic British dessert made with fresh berries and bread. The berries are cooked down into a sweet sauce and layered with bread in a bowl, then left to set in the refrigerator. Instructions

1.In a saucepan, heat sugar and lemon juice over medium heat until sugar has dissolved.
2.Add in half of the strawberries, blackberries, blueberries, and raspberries.
3.Stir until the berries have broken down and created a sauce. Remove from heat and stir in remaining berries.
4.Cut crusts off slices of bread and line the bottom and sides of a large bowl with the bread.
5.Spoon berry mixture into the bread-lined bowl, pressing down to fill all the gaps.
6.Top with another layer of bread and then spoon more berry mixture on top. Repeat until the bowl is full, using remaining bread and berries to create multiple layers.
7.Put a plate on top of the pudding and weigh it down with a can. Place in the fridge for at least 6 hours or overnight.
8.When ready to serve, turn the bowl over onto a plate and remove the pudding. Serve with freshly whipped cream.
