Ingredients

1/2 cup pickling salt
2 quarts water
1 1/2 1 1/2 lbs pearl onions or 1 1/2 lbs shallots
2 tablespoons brown sugar
2 cups malt vinegar
1 teaspoon black peppercorns
1/4 teaspoon whole allspice
1/4 teaspoon hot pepper flakes
1 bay leaf , crumbled

Instructions

1.In a large pot, dissolve the pickling salt in water.
2.Add the onions/shallots and soak for 24 hours in the refrigerator.
3.The next day, rinse the onions/shallots and drain well.
4.In a saucepan, combine brown sugar, malt vinegar, black peppercorns, whole allspice, hot pepper flakes, and crumbled bay leaf. Bring the mixture to a boil.
5.Add the onions/shallots and reduce heat to a simmer. Cook for 10 minutes.
6.Spoon the onions/shallots and vinegar mixture into sterilized jars. Seal the jars and let them cool to room temperature.
