Ingredients

1 cup milk
2 tablespoons sugar
3 tablespoons butter or 3 tablespoons margarine
1 cup warm water
1 teaspoon sugar
1 tablespoon dry yeast
1 teaspoon salt
5 -6 cups flour
1/4 cup yellow cornmeal

Instructions

1.In a saucepan, heat milk and butter until butter melts. Add sugar and stir well. Remove from heat and let it cool.
2.In a small bowl, dissolve yeast in warm water and let it stand for 5 minutes until frothy.
3.In a large bowl, combine flour, cornmeal and salt. Add yeast mixture and milk mixture to it. Mix well to form a soft dough.
4.Cover the dough and let it rest for 10 minutes.
5.Meanwhile, preheat griddle to medium heat.
6.Roll out the dough to 1/2 inch thickness and cut rounds using a biscuit cutter or a glass.
7.Place rounds on a cornmeal dusted baking sheet and cover with a clean kitchen towel. Let it rest for another 10 minutes.
8.Cook English muffins on the griddle for 7-8 minutes on each side or until golden brown.
9.Let the muffins cool and then split them with a fork to get that signature craggy texture. Toast and serve with butter and jam.
